We all love eating thin crepes with different toppings. And today I changed my classic go-to crepes recipe by using oat flour. So perfect gluten free crepes are exist and they are insanely delicious!
You have probably noticed that I’m a big fun of breakfast in bed this winter. Despite the fact it’s quit good weather outside, it is still very cold inside our house, so I prefer to spend more time in bed. But let’s get cooking.
400ml oat milk
200g oat flour
1 tbsp of tapioca starch
2 tbsp coconut sugar
1/2 tsp salt (or less)
1/2 tsp baking soda
lemon juice or vinegar
coconut oil or ghee butter for pan
fresh berries or fruits (optional)
It’s very simple recipe. You just need to blend all the ingredients (but not soda and juice) until creamy. Then add soda and some drops of lemon juice to start soda working (it makes these little holes on crepes). Blend once again. Add some oil on your pan and cook the crepes.
