Perhaps, these are my favorite pancakes. And there are several reasons for such love. Well, firstly, they are easy to cook, which already means a lot to a modern girl who does not have much time. Secondly, they are super-healthy and do not contain wheat flour and gluten, dietary enough and not leaving unpleasant heaviness in the stomach later. And, of course, they are very tasty.
These pancakes are perfect for a leisurely Sunday breakfast with loved ones. And don’t be afraid to experiment with serving: use everything at hand, whether it is honey or grandmother’s jam, fruits or nuts and spices.
There are eggs in my recipe, because I eat them now, but if you want to make a vegan version of pancakes, you can use a banana or chia seeds for stickiness.
1 tbsp. buckwheat flour
1 tbsp. rice flour
2 eggs or vegan eggs
2 tbsp coconut oil
3-4 tbsp coconut sugar
½ or 1 tbsp. almond milk (or water)
1 tsp baking soda
1 tsp cinnamon
a pinch of salt
What to do
Mix all the wet ingredients in a blender, then gradually add the dry ones to them. Add some baking soda and a squeeze of lemon juice s at the very end. The mass should be thick and viscous. Change the proportions as necessary (I generally never follow recipes and always adapt everything for myself).
The next step is frying. I always grease the pan with coconut oil at the very beginning, and then I just fry the pancakes without adding more oil. My friends, I think you can handle the baking process? Of course, you can show your imagination in the size and shape of the pancakes: make them small or large, very thick or thinner, in the shape of a heart and so on.
We decorate the dish with bananas, honey, cinnamon or any other ingredients. Then, it’s time to make delicious tea and invite your loved ones to the table.
