Oh, boy! I love the smell of roasted hazelnuts! It is insane. Hazelnut is one of the most delicious nuts ever. Hot chocolate, raw balls and hazelnut ice cream are real treats. I was so glad when I began to study the evolutionary diet without lectins and found hazelnuts in the list of safe nuts. Win win. I don’t know why I didn’t come up with this recipe earlier, it is so simple and incredibly tasty. And no ice cream maker is required! Such a perfect summer treat. No sugar, no milk (of course). Only good stuff.
200g roasted hazelnuts
can of coconut milk or cream
spoon of vanilla extract or rum
What to do:
Soak the roasted nuts for several hours in order to help your blender. This step is optional, but do not forget to roast your nuts or buy roasted, not raw hazelnuts. It is roasted hazelnuts that give this divine flavour!
Peel the dates and put them into the blender with other ingredients. Blend it up till nice and creamy. Taste it out, if you want it to be sweeter – add a couple more dates. Let me tell you, the vanilla extract (or rum) plays here the function of not just a flavoring, but also an anti-crystallizer, if you can call it that. That is, without having an ice cream maker, we can achieve an almost perfect consistency without ice crystals, adding a little alcohol like vanilla extract. Sometimes you can see starch in similar recipes, but I prefer to use just my vanilla extract, and I don’t care if I have some icy stuff in there.
If you want, you can add some pieces of nuts or cacao nibs in the ice cream. For setting, it is enough to put it in the freezer for 4 hours. You will definitely like it! And all the kids will be delighted, and your husband will ask for an extra scoop!
