Let’s talk about date night. Italian food, good wine and favorite music. Sounds nice? You can have your perfect date at home. Or on the terraсe as we do. Take your linen tablecloth and beautiful tableware, cook Italian ravioli and enjoy.

You need:

250-300g of flour
2 eggs
4 egg yolks
*don’t use eggs if vegan, just add some water

For the filling:

300g of mushrooms on choice
1 onion
dill
handful of fresh spinach
1 white sweet potato or normal potato
ghee butter
olive oil
salt & paper
dry oregano
parmesan (or vegan parmesan)

Making dough:
Sift flour into a bowl and make a small funnel in the flour hill. We break there eggs and yolks (the whites can be used in omelet) and begin to throw flour from the edges to the center, kneading the dough. You can use a kitchen combine if you want. When all the liquid is absorbed, begin to knead the dough with your hands. When it’s ready, cover your dough with plastic wrap and leave at room temperature for 30 minutes.Г

Cooking filling:
Finely chop all the ingredients and fry in melted butter. Greens are added at the end. Sweet potato (resistant starches are preferable to regular potatoes) I would recommend kneading with a fork so that the whole filling has a more uniform consistency. Salt and pepper to taste. Separately, I roasted slices of two champignons for serving.

Finally, roll out the dough into two thin layers. At the first layer put your filling, distributing it by sectors. Then cover the top with the second layer of dough, press it with fingers and cut it into squares (or any other shape). I used a special knife for ravioli, but you can safely cut with ordinary ones, and then press the edges of with a fork. Cook ravioli in boiling salted water for 5 minutes.

As a serving, I used roasted champignons, a few spoons of olive oil, parmesan and fresh dill (I wish I had fresh basil). Of course, it is possible to make a cream sauce, but it’s not a healthy option… But! Sometimes violations of the principles of healthy eating are beneficial, otherwise life becomes boring.

Therefore, I offer you several other options for filling:

  1. Classic ricotta and spinach.
  2. More refined gorgonzola and walnut.
  3. The combination of pumpkin and cheese / feta.

As sauce you can use:

  1. Any kind of pesto.
  2. Arrabiata (tomatoes, herbs oregano/basil and chili).
  3. Cream.
